LUK LAK FROM THE MOUNTAIN

On the way finding new ingredients, Luk Lak and Madame Bình have chosen wampee fruit (mắc mật) from up on the mountainous area in Lang Son as the gift for season. Peppery like fresh peppercorn, tangy like pomelo peel, incredibly fragrant like no other fruits, “mắc mật” took the stage and shines in our seasonal signature – grilled duck with wampee fruit sauce.

Thick and fatty ducks from Hoa Phuoc, Hoa Chau are used for this dish as lard absorbs and retains the fruit’s aroma. The ducks are marinated overnight in the mixture of “mac mat” and spices, then slowly grilled over charcoal.
